Roasted squash & beets summer salad

Who doesn't love a delicious beets infused salad to enjoy anytime of the day! With summer having arrived, a delicious evening salad is the perfect addition on your dinner table. 

Recipe: BGC Beets and Squash Salad

 

INGREDIENTS

-2 beets (peeled and sliced)

-2 cups butternut squash (peeled and diced)

-2 tbsps olive oil

-salt and pepper to taste

-1/4 cup crumbled Feta cheese

-1/4 cup pomegranate seeds


    INSTRUCTIONS

    -Preheat the oven to 220 °C degrees.

    -Spray two baking sheets with olive oil and place the beets in a single layer on one of baking sheets, drizzle with some olive oil and sprinkle with salt and pepper. Repeat the same for the butternut squash.

    -Roast the beets and squash in the preheated oven for 20-25 minutes. Turn the beets and squash over halfway through.

    -Remove from the oven and allow to cool for a few minutes.


        Enjoy with your favorite BGC Salad Sauce :)
