Butternut Protein Salad

Summer is around the corner and it is the perfect time to get your salad game on! Our Butternut Protein salad, is the perfect combination of your greens, vegetables and of course protein.

Protein Butternut Salad Recipe

 

Ingredients 

 

-1 small butternut squash, peeled, deseeded & chopped

-1tbsp olive oil

-400g lentils

-100g spinach leaves

-Sun Dried Tomatoes for topping 


Method

-Pre-heat oven to 190°C/375°F/Gas Mark 5.

-Place the butternut squash on a large baking tray, season well and top with olive oil.

-Roast for 20-30 minutes.

-Toss with the lentils and serve on a bed of spinach and top with sun-dried tomatoes.

Top with your favourite BGC Salad Sauce.
